  • 1 Skillet or oven (for bacon)
  • 2 Mixing bowls (dry/wet)
  • Whisk
  • Spoon or cookie scoop

Ingredients
  

  • 2 cups Almond flour
  • 4 large Eggs Room temperature
  • 1/4 cup Melted butter or oil Butter or coconut oil
  • 1 tsp Baking powder
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
  • 6 slices Bacon Cooked & crumbled (≈1 cup)
  • 1 cup Shredded cheddar cheese
  • 2 tbsp Green onions (optional) Chopped
  • 1 tbsp Jalapeños (optional) Diced

Instructions
 

  • Preheat oven to 350°F (175°C). Line or grease a 12-cup muffin tin.
  • Cook bacon in skillet until crispy (or bake 400°F for 15-20 min). Crumble and set aside.
  • In a large bowl, whisk almond flour, baking powder, salt, and pepper.
  • In another bowl, beat eggs. Stir in melted butter/coconut oil.
  • Combine wet and dry mixtures until just mixed.
  • Fold in bacon, cheese, and any optional add-ins.
  • Divide batter into muffin tin, filling each about ¾ full.
  • Bake 20–25 minutes or until golden brown and toothpick comes out clean.
  • Cool for 5 min in the tin, then transfer to a wire rack.
  • Enjoy warm or store for later!
