- 2 cups Almond flour
- 4 large Eggs Room temperature
- 1/4 cup Melted butter or oil Butter or coconut oil
- 1 tsp Baking powder
- 1/2 tsp Salt
- 1/4 tsp Black pepper
- 6 slices Bacon Cooked & crumbled (≈1 cup)
- 1 cup Shredded cheddar cheese
- 2 tbsp Green onions (optional) Chopped
- 1 tbsp Jalapeños (optional) Diced
Preheat oven to 350°F (175°C). Line or grease a 12-cup muffin tin.
Cook bacon in skillet until crispy (or bake 400°F for 15-20 min). Crumble and set aside.
In a large bowl, whisk almond flour, baking powder, salt, and pepper.
In another bowl, beat eggs. Stir in melted butter/coconut oil.
Combine wet and dry mixtures until just mixed.
Fold in bacon, cheese, and any optional add-ins.
Divide batter into muffin tin, filling each about ¾ full.
Bake 20–25 minutes or until golden brown and toothpick comes out clean.
Cool for 5 min in the tin, then transfer to a wire rack.
