Ingredients
  

  • 4 boneless skinless chicken breasts (about 2 lbs)
  • 8 slices thick‑cut sugar‑free bacon
  • 6  oz cream cheese softened
  • 1  cup shredded cheddar cheese
  • 2  tbsp chopped green onions
  • 1  tsp garlic powder
  • ½  tsp smoked paprika
  • Salt and pepper to taste
  • Optional: fresh parsley or chives for garnish

Instructions
 

Preheat & Prep (15 min total prep):

  • Preheat oven to 375°F (190°C).
  • In a bowl, combine cream cheese, cheddar, green onions, garlic powder, smoked paprika, salt & pepper.

Prepare Chicken:

  • Butterfly each breast: slice horizontally to create a pocket.
  • (Optional) Lightly pound to even thickness.

Stuff & Wrap:

  • Spoon ~2–3 Tbsp cheese mixture into each pocket.
  • Secure with toothpick if needed.
  • Wrap each breast with two bacon slices, overlapping to seal.

Bake (40 min):

  • Place in greased baking dish without overlapping.
  • Bake 35–40 min, until internal temperature reaches 165°F (74°C) and bacon is crispy.
  • (Optional) Broil 2–3 min for extra crispness—watch closely.

Rest (5 min):

  • Remove from oven and let rest 5 minutes on a plate to redistribute juices.

Serve:

  • Remove toothpicks.
  • Garnish with parsley or chives.
  • Serve hot with keto‑friendly sides.
