- 1 lb grass-fed beef thinly sliced
- 2 Tbsp avocado oil or ghee divided
- 4 oz diced bacon or pancetta
- 2 –3 medium zucchini spiralized (or shirataki noodles)
- 1 cup broccoli florets
- 1 cup sliced bell peppers
- 1 cup spinach or bok choy
- 1 small shallot finely chopped
- 2 cloves garlic minced
- 1 Tbsp grated fresh ginger
- 3 Tbsp tamari or coconut aminos
- 1 Tbsp apple cider vinegar
- 1 tsp powdered erythritol or monk fruit sweetener
- ¼ tsp xanthan gum
- 1 tsp sesame oil
- Salt and freshly ground black pepper to taste
- Optional garnishes: red pepper flakes sesame seeds, fresh cilantro
Sauté Aromatics & Beef (5 min):
Add remaining oil, shallot, garlic, and ginger; cook 1 min. Increase heat, add beef; sear 3–4 min until browned but still tender. Remove beef.
Stir Fry Veggies (3 min):
Emulsify Sauce (1 min):
Off heat, whisk tamari, vinegar, sweetener, and xanthan gum. Return beef and bacon to pan; pour sauce over and stir to coat.
