- 1 cup almonds finely chopped or ground
- ½ cup unsweetened shredded coconut
- ½ cup natural almond butter no sugar added
- 2 tbsp ground flaxseed
- 2 tbsp lemon zest from 2 lemons
- 1 tbsp fresh lemon juice
- 2 –3 tbsp powdered erythritol or monk fruit sweetener
- 1 tsp vanilla extract
- Pinch of sea salt
Optional add‑ins:
- 1 tbsp sugar‑free chocolate chips
- 1 tsp melted coconut oil
- 1 tbsp chopped pecans
In a large bowl, combine almonds, shredded coconut, ground flaxseed, sweetener, and sea salt.
Add lemon zest, lemon juice, almond butter, and vanilla. Stir until crumbly.
