Ingredients
  

Main Mixture:

  • 8  oz full‑fat cream cheese softened
  • ½  cup natural peanut butter no sugar added
  • ⅓  cup powdered erythritol or monk fruit sweetener
  • 1  tsp vanilla extract

Coating:

  • 4  oz sugar‑free dark chocolate chopped
  • 2  tbsp coconut oil

Optional Garnish:

  • 1  tbsp crushed peanuts
  • Pinch of sea salt

Instructions
 

  • Beat base: In a bowl, whip cream cheese and peanut butter until smooth.
  • Sweeten: Stir in sweetener and vanilla extract; taste and adjust.
  • Chill mixture: Refrigerate 30 minutes until firm enough to handle.
  • Form balls: Roll 1 tbsp portions into balls; place on parchment. Freeze 15 minutes.
  • Melt coating: In microwave or over double boiler, melt chocolate with coconut oil, stirring to a glossy sauce.
  • Dip balls: Using a fork, coat each ball in chocolate; tap off excess. Return to parchment.
  • Garnish & set: Sprinkle with crushed peanuts or salt. Refrigerate 20 minutes until set.
