Equipment

  • Mixing Bowl
  • Spoon or piping bag
  • Paper towels

Ingredients
  

  • 60 pepperoni slices sandwich-style or turkey
  • 8 oz full-fat cream cheese softened
  • 2 Tbsp grated Parmesan cheese

Instructions
 

Preheat the oven

  • Set your oven to 400°F (200°C) and line a baking sheet with parchment paper for easy cleanup.

Form the pepperoni base

  • Arrange 30 pepperoni slices flat on the baking sheet, slightly overlapping if needed to form small cups.

Add the filling

  • In a bowl, mix cream cheese and Parmesan. Spoon or pipe 1 tsp of the mixture onto each pepperoni slice.

Top and seal

  • Place another pepperoni slice over each filled one, pressing gently to seal.

Bake until crispy

  • Bake for 12–15 minutes, until edges curl and the cheese melts.

Cool and drain

  • Transfer to a paper towel-lined plate for 2–3 minutes to absorb excess grease.

Serve

  • Enjoy warm as-is or with a side of sugar-free marinara for dipping.
