Ingredients
  

  • 2 cups filtered water
  • ½ cup erythritol or allulose allulose recommended for softer texture
  • 1 cup fresh lemon juice from 4–6 lemons
  • 1 tablespoon lemon zest
  • ½ teaspoon vanilla extract optional
  • 1 pinch salt
  • 1 small handful fresh mint or basil optional, for infusion

Instructions
 

  • In a medium saucepan, combine 2 cups water, ½ cup sweetener, pinch of salt, and vanilla extract if using. Heat gently while whisking until fully dissolved.
  • Remove from heat. If using herbs, add them now and steep for 10 minutes. Strain before continuing.
  • Zest 2–3 lemons to yield about 1 tablespoon zest. Juice enough lemons to get 1 cup fresh lemon juice. Remove seeds.
  • Once syrup is warm (not hot), whisk in lemon juice and zest. Taste and adjust sweetness if needed.
  • Cover and refrigerate the mixture for 1–2 hours until completely chilled.
  • If using an ice cream maker, churn according to the manufacturer’s instructions (usually 15–20 minutes) until soft-serve consistency.
  • Transfer to a freezer-safe container. Press plastic wrap against the surface and freeze for at least 4 hours or until firm.
  • For no-machine method: Pour chilled mixture into a container. Every 30 minutes for 2 hours, stir with a fork to break up ice crystals. Then freeze until firm.
  • Let sit at room temperature for 5 minutes before scooping. Garnish with mint or a lemon slice if desired.
