- 1 tsp ground cinnamon
- Pinch of nutmeg optional
- ¼ tsp xanthan gum
- Pinch of salt
- 1 tbsp fresh lemon juice
Almond Flour Topping:
- 1½ cups almond flour
- 2 –3 tbsp granulated keto sweetener
- 1½ tsp baking powder
- ¼ tsp xanthan gum
- Pinch of salt
- 1 tsp ground cinnamon
- 4 tbsp melted butter or coconut oil/vegan margarine for dairy-free
- 1 –2 tbsp unsweetened almond milk optional, to moisten
Optional Garnish:
- Sliced almonds
- Coconut whipped cream or Greek yogurt
Make Filling:
In a large bowl, gently toss peaches with erythritol, cinnamon, nutmeg, xanthan gum, salt, and lemon juice until evenly coated. Transfer to a greased 8×8 or 9×9-inch baking dish.
